Ingredients

6 c. grated zucchini
1 small can crushed pineapple
2 tsp. lemon juice
6 c. sugar (4 if you prefer a less sweet jam)
2 - 3 oz. boxes apricot jell-O
Preparation

Mix all ingredients in sauce pan and boil for 15 minutes. Remove from heat and add jell-O.
Mix and let stand until cool. Freeze in appropriate containers.
