Peach Preserves - cooking recipe

Ingredients
    4 lb. peaches
    2 Tbsp. lemon juice
    1 pkg. powdered pectin
    7 c. sugar
Preparation
    Peel and pit
    peaches.\tThinly\tslice
    (about
    4 cups). Combine peaches, lemon juice
    and
    pectin in a large saucepan. Stir in sugar and bring
    to
    a
    rolling boil.
    Boil hard for 1 minute, stirring constantly.
    Remove
    from heat and skim foam. Pour hot into hot
    jars,
    leaving 1/4 inch\theadspace.
    Adjust caps.
    Process for 10
    minutes
    in boiling water bath.
    Yields about 6 (12 ounce) jars.
