Brenda'S Special Salad - cooking recipe

Ingredients
    1 head Boston or bibb lettuce
    1/2 lb. Mozzarella cheese, sliced 1/4 inch thick
    2 medium plum tomatoes
    1 red onion
    wine vinegar (season to taste)
    olive oil (season to taste)
    1 clove garlic
    1/2 c. chopped fresh parsley
    8 to 10 large black olives, chopped
    1/2 tsp. fennel (optional)
Preparation
    Wash and pat dry lettuce and place on serving tray.
    Place sliced tomatoes and Mozzarella cheese on lettuce in alternating pattern.
    Grind garlic, fresh parsley and fennel.
    Sprinkle over salad.
    Sprinkle chopped olives and oil and vinegar to suit taste.
