Oriental Eggplant - cooking recipe
Ingredients

2 Tbsp. oil
1 eggplant, washed, sliced thin
1/2 green pepper, chopped
4 to 5 tomatoes, ripe
salt and pepper to taste
Preparation

Saute eggplant in oil; add green peppers and cook about 10 minutes.
Cut up tomatoes and add to eggplant mixture.
Cook until all ingredients are soft.
Serve hot as a vegetable, or cold on crackers or dark bread as an hors d'oeuvre.
