Pesto Mushroom Chicken - cooking recipe

Ingredients
    4 boneless skinless chicken breast halves
    salt and pepper to taste
    5 Tbsp. olive oil, divided
    1 c. loosely packed fresh basil leaves
    1/2 c. chopped walnuts
    2 garlic cloves, minced
    1/2 tsp. salt
    1/3 c. grated Parmesan cheese
    4 slices mozzarella cheese
    1 c. fresh mushrooms, sliced
Preparation
    Flatten chicken to 1/4 inch thickness; sprinkle with salt and pepper. In a large skillet, cook chicken in 1 tablespoon oil for 5 - 10 minutes on each side or until juices run clear.
