Bean Soup - cooking recipe

Ingredients
    1 lb. dried small white beans, rinsed and soaked
    6 c. chicken broth
    6 c. water
    2 1/2 c. diced carrots
    1 1/2 c. chopped onion
    1 1/2 c. diced celery
    1 (14 oz.) can tomatoes, drained and chopped (reserve juice)
    2 Tbsp. olive oil
    pepper to taste
    3/4 tsp. salt (optional)
    1/4 tsp. hot pepper sauce
Preparation
    Place drained beans, broth and water in a 4 to 5-quart saucepan.
    Bring to a boil.
    Reduce heat and boil gently, uncovered, 40 minutes.
    Skim foam off top.
