Gumbo - cooking recipe

Ingredients
    3 to 4 cloves chopped garlic
    1 large, chopped onion
    1 medium bell pepper, chopped
    2 to 3 bay leaves
    1 Tbsp. Worcestershire sauce
    salt and hot sauce to taste
    3 Tbsp. chopped parsley
    1/2 tsp. thyme
    3 Tbsp. flour
    3 Tbsp. cooking oil
    8 to 10 oz. frozen okra
    4 c. chicken broth
    any quantity your choice meat (chicken, turkey, smoked sausage, crab, shrimp or any combination)
Preparation
    In a 3-quart pot over medium-high heat, make a roux by adding oil, then flour, stirring constantly.
    Brown flour to a very dark brown, almost burning.
    Add garlic, bell pepper and onion.
    Turn down heat; saute until tender.
    Add chicken broth, okra, parsley, Worcestershire sauce, thyme, hot sauce and salt.
    Heat until boiling.
    Cook over medium heat for 1 hour.
    Add meat and bay leaves.
    If using seafood or smoked sausage, add raw and cook until done.
    If using chicken or turkey, add 15 to 20 minutes before serving.
    Heat thoroughly.
    Add water as needed to keep gumbo to a thin consistency.
    Serve over rice with crackers. Serves 6 to 8.
