Black-Eyed Pea Casserole - cooking recipe
Ingredients

1 lb. ground meat
2 (15 oz.) cans black-eyed peas with jalapeno peppers
2 c. cooked rice
1 (16 oz.) can tomatoes, drained (2 c.)
1 c. grated Cheddar cheese
1/2 c. minced onion
1 Tbsp. butter
salt and pepper to taste
green chilies (if desired)
Preparation

Brown ground meat (ground turkey may be used) in skillet.
Mix ingredients in order given:
black-eyed peas, cooked rice, tomatoes, cheese, onion, butter, salt and pepper to taste.
Add green chilies, if desired.
Bake in a 9 x 13 x 2-inch baking pan in a 350\u00b0 oven for 20 minutes.
I usually top with more cheese.
