French Onion Soup - cooking recipe

Ingredients
    1/3 c. vegetable oil
    7 c. thinly sliced onions
    1/4 c. cornstarch
    10 c. beef stock
    salt and pepper
    1 loaf or 8 to 10 slices French bread
    8 oz. Mozzarella, grated
    1/4 c. grated Parmesan
Preparation
    Cook onions in vegetable oil at medium heat for 40 minutes. Stir in cornstarch for 2 to 3 minutes.
    Remove from heat.
    Heat stock in a 4 1/2-quart pan.
    Add onions; cover and partially simmer for 40 minutes.
    Skim froth as it appears.
    Add salt and pepper.
    Place bread in a casserole; ladle soup over bread and cover generously with Mozzarella and Parmesan.
    Bake at 375\u00b0 for 10 to 20 minutes or until cheese is bubbly and brown.
