Potato Enchiladas - cooking recipe

Ingredients
    6 to 10 potatoes
    30 corn tortillas
    2 cans Ro-Tel tomatoes
    2 lb. Velveeta cheese
    1 lb. hamburger meat
    1 small onion
Preparation
    Soften tortillas by dipping in hot oil (do not cook long, they will be tough).
    Fry potatoes to soft stage.
    Fry ground meat with onions.
    Melt cheese with Ro-Tel tomatoes.
    Roll mixture of meat and potatoes in each tortilla.
    Place in a large baking pan or dish.
    Cover with melted cheese and Ro-Tel mixture.
    Bake at 350\u00b0 until cheese bubbles.
