Lower Fat Chicken Yorkshire - cooking recipe

Ingredients
    4 boned, skinned chicken breasts, cut in half
    1/4 c. flour
    1 tsp. salt
    1/4 tsp. pepper
    1 1/2 c. flour
    1 1/2 tsp. baking powder
    1 plus tsp. salt
    4 egg whites
    1/2 c. egg substitute
    2 c. milk (skim)
    2 Tbsp. melted oleo
    1 Tbsp. bacon grease
    1 Tbsp. lite oleo
    2 Tbsp. flour
    2 c. milk (skim)
    salt and pepper
Preparation
    Mix 1/4 cup flour, 1 teaspoon salt and 1/4 teaspoon pepper and dredge chicken breasts.
    Brown in skillet sprayed with vegetable oil spray.
    Remove chicken.
    Save drippings for gravy.
