Italian Beef With Peppers - cooking recipe

Ingredients
    5 lb. beef roast (solid piece preferred)
    6 bay leaves
    3 garlic cloves, sliced
    6 green peppers, quartered
    1 Tbsp. fennel seed
    oregano
    1 garlic clove, chopped
    olive oil
Preparation
    Place roast on foil; arrange bay leaves and garlic slices on and around the meat.
    Salt and pepper to taste.
    Insert meat thermometer in thickest part.
    Seal foil and place in roasting pan.
    Roast at 325\u00b0 to medium rare.
    Cool and refrigerate overnight, saving pan juices.
