Baked Rice Pudding - cooking recipe

Ingredients
    3 beaten eggs
    2 c. milk
    1/2 c. sugar
    1 tsp. vanilla
    1/2 tsp. salt
    1 3/4 to 2 c. cooked long grain rice
    1/3 to 1/2 c. raisins (optional)
    ground nutmeg
Preparation
    Combine first 5 ingredients.
    Stir in rice and raisins.
    Turn into 10 x 6 x 2-inch baking dish.
    Bake, uncovered, at 325\u00b0 for 30 minutes; stir.
    Sprinkle with nutmeg.
    Bake until knife inserted halfway between center and edge comes out clean, about 30 minutes. Makes 6 servings.
