Vegetable Corn Bread - cooking recipe

1 1/4 c. self-rising cornmeal
1/2 c. self-rising flour
2/3 c. milk
1/4 c. melted butter
1 egg
1 small zucchini, shredded
1/4 c. chopped roasted red pepper
1/4 c. sugar
Preparation

Preheat oven to 400\u00b0.
Grease 9-inch round baking pan; set aside.
Combine cornmeal, flour and sugar.
Add milk, butter and egg.
Stir until moistened.
Fold in zucchini and roasted red pepper. Bake 20 to 25 minutes until toothpick inserted into center comes out clean.
Cool on wire rack 10 minutes.
