Cinnamon Cucumber Rings - cooking recipe

Ingredients
    2 gal. large unpeeled cucumbers
    2 c. salt
    8 qt. water
    7 c. vinegar
    1 Tbsp. alum
    1 tsp. green food coloring
    12 c. sugar
    4 sticks cinnamon
Preparation
    Slice cucumber rings in 1/2-inch thick slices.
    Remove the seeds.
    Add water and salt to cucumbers and let stand 5 days. Drain.
    Combine 1 cup vinegar, alum and food coloring; pour over cucumbers in kettle and cover to the top of cucumbers with water. Simmer for 2 hours; drain.
