Shrimp And Crab Madeira - cooking recipe

Ingredients
    3 Tbsp. butter
    2 Tbsp. shallots
    3/4 c. sliced mushrooms
    1/2 lb. shrimp (uncooked)
    6 oz. cooked crab, drained
    1/2 c. Madeira
    1/4 tsp. tarragon
    1 Tbsp. lemon juice
    2 tsp. tomato paste
    2 egg yolks
    3/4 c. whipping cream
    salt and pepper to taste
    chopped parsley
    linguine
Preparation
    Melt butter.
    Add shallots and saute until soft.
    Add mushrooms and saute until liquid evaporates.
    Add shrimp and cook until pink.
    Add crab.
    Stir in Madeira and cook until almost reduced.
    Add tarragon, lemon juice and tomato paste.
    Mix. Combine yolks and cream and very slowly add to saucepan, mixing constantly.
    Add salt and pepper.
    Taste and correct seasoning. Serve on linguine topped with parsley.
    Serves 2.
