Red Beans And Rice - cooking recipe

Ingredients
    2 1/2 c. red beans (picked over, washed and drained)
    2 Tbsp. olive oil
    2 to 3 garlic cloves, minced
    1/2 lb. linked smoked sausage, sliced
    1 onion, chopped
    1/2 tsp. freshly ground black pepper
    1 tsp. salt
    1/4 tsp. dried red pepper flakes (optional)
    6 c. cooked rice
Preparation
    Wash the beans well, removing any imperfect ones.
    Place beans in cold water and soak overnight.
    Boil 6 cups water.
    Gradually add the beans to boiling water.
    Simmer for 2 minutes and remove from heat.
    Set aside to soak for 1 hour.
    Then rinse beans and strain.
