Red Snapper Yucatan - cooking recipe

Ingredients
    1 medium to large onion, sliced
    1/2 red pepper, sliced
    1 c. stuffed green olives, sliced
    1/2 c. + 3 Tbsp. orange juice
    2 Tbsp. lemon juice
    1/4 tsp. coriander
    1/4 tsp. cilantro
Preparation
    Preheat oven to 400\u00b0.
    In large skillet over medium heat, saute the onions, red pepper and olives.
    Lay fish filets on top of sauteed onion, peppers and olives.
    Add 3 tablespoons orange juice, 2 tablespoons lemon juice, and 1/4 teaspoon coriander.
    Bake in 400\u00b0 oven for 12 minutes.
    While fish is baking, mix a bit of cornstarch and water to thicken sauce.
