Pineapple Upside-Down Cake - cooking recipe

4 eggs
1 c. sugar
1 c. plain flour
1 tsp. baking powder
1 tsp. vanilla
1/4 tsp. salt
1 c. light brown sugar
1/2 c. butter
6 to 8 canned pineapple slices
maraschino cherries
Preparation

Beat eggs until frothy.
Add sugar and mix well.
Add flour, baking powder, vanilla and salt; beat well and set aside.
In a 10-inch iron skillet, melt brown sugar and butter, stirring constantly.
Arrange pineapple slices in the brown sugar mixture, putting a cherry in the center of each slice and between slices. Pour cake batter carefully over pineapple.
Bake at 350\u00b0 for 35 minutes or until cake tests done.
Cool 15 to 20 minutes.
Turn out onto cake plate.
