Polish Potato Pancakes - cooking recipe

Ingredients
    2 medium red potatoes
    2 medium white potatoes
    1 egg
    1 c. flour
    2 whole stalks green onions or scallions
    salt to taste
Preparation
    Peel and grate potatoes (use grated, not blender).
    In
    a large bowl, stir all ingredients together.
    Add olive oil to large skillet.
    Oil should be very hot.
    Form into cakes.
    Brown evenly on both sides.
    Serve, if desired, with sour cream or stewed tomatoes.
    Makes 12 to 16 cakes.
