Quick And Easy Stir-Fry - cooking recipe
Ingredients

3 c. cooked rice
1/2 c. chopped onion*
1/2 c. grated carrots*
1/2 c. chopped green pepper (optional)*
1 c. chopped ham, chicken, etc., cooked
4 eggs, well beaten
2 to 3 Tbsp. soy sauce
1 to 2 tsp. olive or vegetable oil
Preparation

Add oil and vegetables to hot skillet or wok; saute until vegetables are almost tender (3 to 5 minutes).
Add rice, meat and soy sauce and mix well.
Lower heat and stir in beaten eggs.
Cook for 1 to 2 minutes more, remove from heat and let set for 2 to 3 minutes (or until eggs are done).
Additional soy sauce can be added to taste.
