Leek And Potato Soup - cooking recipe

Ingredients
    1/4 cup Butter
    3 Leeks, trimmed, carefully washed and
    thinly sliced
    3 cans Chicken Stock
    2 lb. Potatoes, peeled, quartered and thinly
    sliced (Yukon Golds work well)
    Salt and White pepper
Preparation
    In large saucepan, melt butter.
    Add leeks and saute until they begin to soften, 3-5 minutes.
    Add stock & potatoes, bring to boil. Reduce heat, simmer until tender, about 20 minutes.
    Season to taste with salt and white pepper.
