Brunswick Stew - cooking recipe

Ingredients
    3 lb. chicken
    1 small onion
    2 qt. tomatoes (canned or fresh)
    1 qt. butter beans, drained
    1 qt. whole kernel corn
    3 medium Irish potatoes
    1 c. chopped onion
    5 Tbsp. sugar (optional)
    salt to taste
    black pepper to taste
    red pepper to taste
Preparation
    Cook meat and one onion in 1 quart of water and simmer until meat loosens from bones.
    Cut into pieces.
    Discard bones.
    Add salt, peppers and vegetables.
    Stir often while mixture comes to a boil.
    Cover and simmer over low heat for 3 to 5 hours.
    Stir occasionally to prevent sticking.
    This makes approximately 6 quarts of stew.
    This can be frozen.
