Crawfish Extraordinaire - cooking recipe
Ingredients

1 lb. cooked crawfish tails
1/2 stick butter
2 Tbsp. flour
1 medium onion, minced
2 cloves garlic, minced
2 Tbsp. parsley, minced
2 Tbsp. green onion, minced
1/2 c. white wine
1 c. heavy cream
salt and pepper
paprika
Preparation

Melt butter; add flour and stir until blended.
Add onion, garlic, parsley and green onion; cook until clear.
Add crawfish and cook over low fire about 10 minutes.
Add white wine and simmer until blended.
Slowly add cream and simmer over low fire. Do not boil or it will curdle.
Add seasonings to taste.
Serve over cooked noodles or toast points.
