Vegetable Kugel *(Good For Passover) - cooking recipe

Ingredients
    1/4 c. chopped green pepper
    1 c. chopped onion
    1/2 c. chopped celery
    1 1/2 c. grated carrots
    2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
    3 eggs, beaten
    6 Tbsp. butter or margarine
    1/8 tsp. pepper
    3/4 c. matzo meal
Preparation
    Mix all ingredients.
    Pour into margarine-greased 2-quart ovenproof dish, ring mold or muffin tins.
    Bake at 350\u00b0 for 45 minutes or until firm.
    Serves 8.
