Stuffed Zucchini - cooking recipe

Ingredients
    3 or 4 small zucchini
    2 eggs
    1/4 c. Romano cheese
    1 tsp. garlic, minced
    1 tsp. parsley, chopped
    salt and pepper to taste
    16 oz. can stewed tomatoes
    1 onion, chopped
Preparation
    Preheat oven to 300\u00b0.
    Wash zucchini.
    Cut lengthwise; scrape insides out.
    Put scraped zucchini in a bowl; add all other ingredients except tomatoes.
    Mix well and stuff zucchini.
    Place in baking pan which has been oiled or sprayed with vegetable spray. Pour tomatoes over zucchini.
    Cover and bake for about 1 hour.
