Peas, Peas, Peas - cooking recipe

Ingredients
    2 strips bacon, cut in pieces
    1/2 small onion
    1 small piece hot pepper (no seeds)
    1 tsp. each: sugar and sherry vinegar
    2 1/2 lb. fresh peas, shelled
    salt to taste
Preparation
    Put bacon in a pan with 1 quart of cold water; bring to a boil.
    Add remainder of ingredients, except peas.
    Cook until water is reduced by half.
    Add 1 more quart cold water, peas and salt to taste.
    Bring to boil; reduce heat and simmer, covered, for 1 1/2 to 2 hours, adding water as necessary, until tender. Makes 6 to 8 servings.
    This method works for all kinds of peas and butter beans.
