Lo-Cal Cheese 'N Vegetable Casserole - cooking recipe

Ingredients
    1 lb. fresh spinach, chopped
    1 c. chopped iceberg lettuce
    1 c. chopped green onions
    1/2 c. chopped fresh parsley
    1 c. diced Monterey Jack cheese
    4 eggs, lightly beaten
    2 Tbsp. margarine, melted
    plain yogurt
Preparation
    Preheat oven to 325\u00b0.
    Combine the first 5 ingredients; mix lightly.
    Add eggs; mix well.
    Coat a casserole dish with melted margarine.
    Add vegetable mixture; bake for 1 hour, until top is brown and crisp.
    Serve topped with a dollop of yogurt.
    Each serving contains approximately 153 calories.
