Rhubarb Cobbler - cooking recipe

Ingredients
    1/4 c. butter
    sugar
    1 c. flour
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 c. milk
    3 c. diced rhubarb
    1 c. fruit juice
Preparation
    Cream the butter and 1/2 cup of sugar until light and fluffy. Stir flour, baking powder and salt together; stir into butter mixture alternately with milk.
    Beat until smooth.
    Pour into loaf pan.
    Spoon rhubarb over batter.
    Sprinkle 3/4 cup of sugar over rhubarb.
    Pour fruit juice over top.
    Bake at 375\u00b0 for 45 to 50 minutes.
    Serve warm with cream, whipped cream or ice cream, if desired.
    Yields 6 servings.
