Crawfish Fettucini Casserole(Serves 10 To 12) - cooking recipe
Ingredients

3 onions, chopped
3 celery stalks, chopped
2 bell peppers, chopped
2 buttons garlic
3 sticks oleo
1/4 c. flour
4 Tbsp. dried parsley
1 pt. cream, half and half
1 lb. Velveeta
1 lb. fettucini noodles, boiled (al dente)
2 Tbsp. jalapenos
3 lb. crawfish, peeled
Parmesan cheese
salt and pepper to taste
Preparation

Saute first seven ingredients together for 15 minutes.
Stir often.
Add crawfish.
Cook 15 minutes.
Stir often.
Add half and half and 1/2 of Velveeta and all jalapenos.
Add salt and pepper and cook for 30 minutes.
Stir often.
Add cooked noodles.
Put in greased casserole dish.
Top with Parmesan and remaining Velveeta. Bake at 350\u00b0 for 15 to 20 minutes.
