Angel Food Cake - cooking recipe
Ingredients

1 1/3 c. egg whites
1 1/3 tsp. cream of tartar
1/4 tsp. salt
1 1/2 c. sugar
1 1/4 tsp. flavoring
1 c. cake flour, sifted
Preparation

Sift the sugar so it is fine grain; reserve 1/2 cup of this to be added to flour.
Beat the egg whites until frothy.
Add cream of tartar and salt.
Continue beating until egg whites are glossy, fine grained and will stand up in a stiff point.
Add gradually, gently beating and folding after each addition, 1 cup sugar, flavoring and 1 cup sifted cake flour which has been sifted 3 times with 1/2 cup sugar.
Pour batter into pan.\tGently cut through batter with knife to break air bubbles.
