Flank Steak Pinwheels - cooking recipe

Ingredients
    1 1/2 to 2 lb. flank steak, pressed by butcher in tenderizer
    freshly ground black pepper
    1 (7 oz.) jar roasted red peppers, drained and cut into 1 inch strips
    1 1/2 c. lightly cooked (just wilted) fresh spinach
    1/2 c. Parmesan cheese
Preparation
    Lay flank steak open; sprinkle with pepper.
    Top with patchwork of peppers.
    Sprinkle evenly with the cheese and then cover with a spinach layer.
    Press firmly.
    Roll up tightly, beginning along edge and secure the roll with a toothpick at 1 inch intervals.
    Slice into 1 inch thick pinwheels, making sure each one is secured with a toothpick.
    Lay the slices on a broiler pan and broil about 1 inch from the heat for 6 to 7 minutes, turning after 3 minutes.
