Mama'S Tomato Catsup - cooking recipe

Ingredients
    10 lb. red tomatoes
    3 large onions
    2 red sweet peppers
    3 (2-inch) cinnamon sticks
    1 tsp. ground mustard
    1 tsp. allspice
    1 Tbsp. salt
    1 c. vinegar
    3/4 c. sugar
    2 tsp. paprika
    1 tsp. celery seed
    1 tsp. whole cloves
Preparation
    Wash and slice all vegetables; combine tomatoes, onions and peppers.
    Let stand about 30 minutes.
    Add vinegar, sugar and spices, tied in a square of cloth.
    Boil gently until thick, stirring often.
    If you put vegetable slices through a coarse sieve before adding vinegar, catsup will be much smoother textured.
    Pour into hot jars and seal.
    Makes 4 pints.
