Tattie (Potato Soup) - cooking recipe

Ingredients
    2 lb. diced potatoes
    2 carrots, diced
    2 turnips, diced
    2 leeks, chopped
    salt and pepper
    3 pt. beef stock
    1 c. grated carrot
    parsley
Preparation
    Add diced carrots, turnips, chopped leeks and seasonings to stock.
    Bring to boil.
    Simmer covered 1 hour.
    Add diced potatoes, grated carrot and simmer another hour.
    Garnish with parsley.
