Chicken And Sausage Jambalaya - cooking recipe
Ingredients

3 Tbsp. butter
1/2 lb. hot sausage
3/4 lb. boneless, skinless chicken breast, cut into bite size pieces
2 Tbsp. blackened Cajun seasoning
1 c. yellow onions, chopped
1 c. green bell peppers, chopped
1 Tbsp. minced garlic
1 1/2 c. uncooked rice
2 1/2 c. chicken stock
Preparation

Melt butter in large saucepan over high heat.
Add sausage. Brown 4 or 5 minutes, stirring frequently and scraping bottom of pan.
Add chicken.
Cook for 4 or 5 minutes or until brown.
Add blackened seasoning, garlic, plus 1/2 cup each of onion and bell pepper.
Cook until vegetables start to soften, about 6 to 8 minutes.
Stir in rice and stock and add remainder of vegetables. Bring all to a boil and turn heat down to a slow simmer.
Simmer 30 minutes.
Pour in baking pan and bake at 350\u00b0 for 1 hour.
