Lemon Cloud Pie - cooking recipe
Ingredients

1 (9-inch) pie shell
3/4 c. sugar
1 c. water
2 slightly beaten egg yolks
1/4 c. cornstarch
1 Tbsp. grated lemon rind
4 oz. Philadelphia Brand cream cheese
2 egg whites
1/4 c. sugar
Preparation

Bake pie shell.
Combine 3/4 cup sugar, water, egg yolks, cornstarch and lemon rind in saucepan and cook over medium heat until thick, stirring constantly.
This will be rather thick. Remove from heat and add cheese.
Blend well.
Cool while preparing meringue from egg whites and 1/4 cup sugar.
Fold stiff meringue into the cooled lemon mixture.
Spoon into baked shell. Sprinkle with baked pastry bits if you have any left from making your dough.
Chill 2 hours.
