Gingered Carrots - cooking recipe

Ingredients
    1 Tbsp. butter
    1 (2-inch) piece fresh ginger, peeled and sliced
    1 lb. peeled and sliced carrots
    3/4 c. water
    1 Tbsp. sugar
    1/8 tsp. salt
    1 Tbsp. chopped parsley (optional)
Preparation
    Heat butter in a large skillet.
    Add ginger and saute, stirring 1 minute.
    Add carrots and water.
    Cover and cook over low heat until just tender, about 15 minutes.
    Add sugar and salt.
    Cook, turning carrots with a spatula until liquid has almost disappeared and carrots are glazed.
    Serve sprinkled with parsley if desired.
