Wyoming-Mexican Casserole - cooking recipe

Ingredients
    1 lb. lean ground beef (or half ground beef/sausage)
    1 small onion, chopped
    1 envelope taco seasoning mix
    1/4 tsp. salt
    1 c. water
    1/4 c. bottled prepared taco sauce
    1 (10 oz.) pkg. frozen chopped spinach (the kids will never know)
    4 oz. (3/4 c.) diced cooked ham
    cooking oil
    12 corn tortillas
    1 c. sour cream
    1 c. shredded sharp or Longhorn cheese
Preparation
    Brown meat and onion.
    Drain off fat.
    Stir in dry taco mix, salt, water and taco sauce.
    Add chopped frozen spinach (can be defrosted quickly in microwave if in a hurry).
    Add ham, cover, cook until thoroughly heated.
    Simmer 5 minutes.
    In another skillet, heat oil. Dip tortillas, one at a time, into oil until soft and limp, 5 to 10 seconds only.
    Drain on paper towels.
    Add 1/3 cup of meat mixture to each shell, roll up.
    Bake at 350\u00b0 for 30 minutes, covered.
    Spread sour cream then cheese on top, return to oven to melt cheese (5 to 10 minutes).
