Rolled Chicken Washington - cooking recipe

Ingredients
    6 whole chicken breasts, boned and skinned
    salt to taste
    Cheddar Filling
    1/2 c. flour
    2 eggs, slightly beaten
    3/4 c. fine dry bread crumbs
    oil (for deep frying)
Preparation
    Rinse chicken and pat dry.
    Pound 1/4-inch thick with meat mallet.
    Sprinkle with salt.
    Spoon Cheddar Filling onto chicken; roll to enclose filling.
    Sprinkle chicken rolls with flour.
    Dip in egg; coat with bread crumbs.
    Chill, covered, for 1 hour.
    Deep fry rolls in 375\u00b0 oil for 5 minutes or until crisp and golden brown; drain.
    Place in baking dish.
    Bake at 325\u00b0 for 30 minutes. Yield:
    6 servings.
