One Egg Cake - cooking recipe

Ingredients
    1 3/8 c. (1 1/4 c. plus 2 Tbsp.) flour
    1 c. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    1/3 c. shortening
    2/3 c. milk
    1 tsp. vanilla
    1 large egg
Preparation
    Sift together in bowl the flour, sugar, baking powder and salt.
    Add the shortening, milk and vanilla; beat vigorously with spoon for 2 minutes, or mix with electric mixer for 2 minutes. Add the egg; continue beating for 2 more minutes.
    Pour batter into an 8 x 8-inch greased pan.
    Bake at 350\u00b0 for 35 to 40 minutes.
