Potato-Cheese Soup - cooking recipe
Ingredients

1 1/2 c. peeled, cubed, round, red potatoes (about 3/4 lb.)
2 Tbsp. water
vegetable cooking spray
1/2 c. sliced green onion (1/2 small)
1 clove garlic, minced
1 3/4 c. skim milk
1/2 c. (2 oz.) shredded Swiss cheese
1/8 tsp. light salt
coarsely ground pepper
Preparation

Place potatoes in a medium saucepan; add water to cover. Bring to a boil, and cook 15 minutes or until tender.
Drain and set aside 1/2 cup of potatoes.
Place the remaining potatoes and 2 tablespoons of water in container of an electric blender, cover and process until smooth.
Set aside.
