Squash Fritters - cooking recipe

Ingredients
    salt and pepper to taste
    3 c. grated squash
    1 egg
    2 Tbsp. sugar
    6 Tbsp. flour
    2 Tbsp. minced onion
    oil for frying
Preparation
    Salt squash; let drain in colander.
    Squeeze moisture from squash.
    Combine all ingredients except oil in a large bowl.
    Mix well.
    Fry a small amount at a time in deep fat until brown on both sides.
    Serve hot.
