Carrot Roast - cooking recipe

Ingredients
    2 c. grated carrot
    1/4 c. pecan meal
    1 onion, chopped fine
    2 c. bread crumbs
    1 (16 oz.) can stewed tomatoes, chopped very fine
    1 tsp. salt
    2 Tbsp. peanut butter
Preparation
    Combine all ingredients together, making sure it is well blended.
    Spray loaf pan.
    Place mixture in pan and bake at 350\u00b0 for 1 hour.
    Serves 4 to 6.
