4 or 5 unpeeled zucchini
flour
fresh ground pepper
Preparation

If
the
kids
won't
eat
vegetables,
try
this.
Cut zucchini lengthwise
into
sticks
about
the
size
of thick, country-style French
fries.
Lay
the sticks on paper towels. Sprinkle fairly
heavily with salt and let stand about 1 hour. Pat sticks dry and shake them in a bag with flour and a little fresh-ground pepper.
Fry the zucchini in batches, don't crowd them, in
hot deep oil (365\u00b0) until golden.
(To conserve oil, you can
use
a
medium-size,
heavy skillet instead of a deep fryer. Fill
skillet
with
about 1 1/2 inches of oil.) Drain the sticks on
paper towels laid over newspaper and salt very lightly.
Keep the
sticks
hot in a slow oven.
Serve them as hot as
possible. For
grownups,
the
sticks
are
good with cocktails, either plain or with Turkish Yogurt Sauce.
