Three Cheese Manicotti - cooking recipe

Ingredients
    12 manicotti shells
    1 1/2 tsp. vegetable oil
    1/2 c. onion, chopped
    3 cloves garlic
    1/2 c. green pepper, chopped
    3 c. tomato sauce
    1/2 tsp. basil
    1/2 tsp. oregano
    1/2 tsp. thyme
    1/2 tsp. pepper
    2 1/4 c. mozzarella cheese, shredded
    1 1/2 c. cottage cheese
    2/3 c. parmesan cheese, grated
    3 eggs, beaten
Preparation
    Preheat oven to 350\u00b0.
    Cook manicotti shells according to package directions.
    Drain and set aside.
    Heat oil in large saucepan and saute the onion, garlic and pepper.
    Stir in the tomato sauce and seasonings.
    Cover and let simmer, stirring occasionally. Combine 1 3/4
    c. of the mozzarella with the cottage cheese, parmesan and beaten eggs.
    Stir gently. Stuff the cheese mixture into the cooked drained shells, using about 1/4 cup per shell. Pour 1/2 c. sauce into a shallow 2 quart casserole dish.
