Mini "Peachy" Cheesecakes - cooking recipe

Ingredients
    24 vanilla wafers
    2 (8 oz.) pkg. cream cheese, softened
    1 (14 oz.) can sweetened condensed milk
    3 eggs, separated
    1/4 c. lemon juice
    1/4 tsp. salt
    1 1/2 c. peach preserves or any topping you wish
Preparation
    Preheat oven to 275\u00b0.
    Place paper liners into muffin tins. Place 1 whole vanilla wafer in each section and set aside.
