Savory Spiced Vegetables - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 medium onion, cut into wedges
    1 clove garlic, minced
    1 1/2 tsp. curry powder
    1 (14 1/2 oz.) can Del Monte original style stewed tomatoes
    1/4 c. seedless raisins
    1 (16 oz.) can Del Monte whole new potatoes, drained and quartered
    1 (16 oz.) can Del Monte blue lake cut green beans, drained
Preparation
    In a medium skillet, heat oil over low heat.
    Add onion, garlic and curry powder.
    Cook until tender, stirring frequently. Blend in tomatoes and raisins. Simmer, uncovered, 10 minutes, stirring occasionally.
    Mix in potatoes and green beans; cover and heat through.
    Season to taste with salt and pepper, if desired. Serves 4.
