Pimiento Cheese Sandwiches - cooking recipe

Ingredients
    1 (8 oz.) pkg. Neufchatel cheese, softened
    2 c. (8 oz.) shredded Colby or Longhorn cheese
    1 (4 oz.) jar diced pimiento, drained
    3 Tbsp. dill pickle juice
    dash of garlic powder
    4 (6-inch) whole wheat pocket bread rounds
    leaf lettuce
Preparation
    Combine cheeses, mixing well. Add next 3 ingredients, mixing well. Cover and chill at least 1 hour.
    Cut pocket bread rounds in half. Line each half with lettuce and fill with 1/4 cup cheese mixture. Yields 8 servings (about 211 calories per serving).
