Penne With Peppers And Bacon - cooking recipe

Ingredients
    2 to 3 red peppers (green are acceptable)
    1/3 c. chopped onion
    3 Tbsp. vegetable oil
    4 Tbsp. butter
    6 oz. bacon, cut into strips
    salt
    pepper
    1 lb. penne (quill shaped pasta)
    1/3 c. grated Parmesan cheese
    3 Tbsp. parsley
Preparation
    Slice peppers into thin squares.
    Saute onion, vegetable oil and 3 tablespoons butter in a skillet.
    When the onion is translucent, add the bacon.
    Brown the bacon, but not until it is crispy.
    Add the peppers and cook, stirring frequently for 6 to 8 minutes, until the peppers are tender but not mushy.
    Add salt and liberal pepper; turn off the heat.
    Drop the pasta into a pot of boiling salted water.
    Drain and toss with the sauce.
    Add the grated cheese and toss with the remaining tablespoon of butter. Sprinkle with parsley.
    Serve promptly.
    Serves 4 to 6.
