Curry Shrimp Creole - cooking recipe

Ingredients
    12 oz. cooked shrimp, peeled and deveined
    2 Tbsp. cooking oil
    1 c. chopped onion
    1 bell pepper, chopped
    1 stalk celery, sliced
    1 clove garlic, minced
    1 16 oz. can tomatoes, cut up, undrained
    1/2 c. slivered almonds
    1/2 c. raisins
    1/4 c. chili sauce
    1 tsp. lemon juice
    1/2 tsp. salt
    1/2 tsp. bottled hot pepper sauce
    1/4 tsp. curry powder
    1/4 tsp. thyme
    hot cooked rice
Preparation
    Heat oil in skillet.
    Cook the onion, pepper, celery and garlic.
    Add undrained tomatoes, almonds, raisins, chili sauce, lemon juice, salt, hot pepper sauce, curry powder and thyme. Bring to a boil, reduce heat.
    Cover and simmer for 30 minutes. Add shrimp, cover and simmer for 5 minutes.
    Serve over rice. Serves 4.
